Delicious Vegetable Biryani Recipe

Veg. Biryani is an aromatic rice dish prepared with mixed herbs, mix vegetables and basmati rice. The recipe is simple but every best thing comes after putting efforts. So here is the recipe for Veg Biryani.

Ingredients:-

Basmati Rice
Ghee/Refined Oil/ Olive oil
Herbs- Cardamoms, Cloves, black pepper, bay leaves, Cumin, black cardamom
Vegetables- Carrots, Beans, Potatoes, tomatoes, onions, Capsicum, Cauliflower
Ginger paste
Garlic paste
Green chilies
Cottage cheese

To prepare Rice-

• Take one cup of basmati rice and cleanse it with water 3-4 times.
• Soak it in water for 15-20 minutes
• Put the rice in the pot or cooker on the gas, add a little ghee, salt, 2-3 cloves and black pepper.
• Let it get cooked.
• Rice is cooked and keep it aside and let it cool.



To prepare Veggies-

• Take a pot or wok or cooker.
• Add 2-3 spoons of ghee or oil and let it boil for a minute.
• Cut veggies an inch size- carrot, potatoes, cauliflower, beans and capsicum. Put all the veggies in the oil and sauté them for 5-10 mins. Stir continuously and do not cover it with lid.
• Take out the sautéed vegetables from the wok and keep it aside.
• Now, in the same wok add 2 spoons of ghee and oil.
• Add all the herbs one by one, cumin, bay leaves, black cardamom, green cardamom, cloves, black pepper.
• Sauté all the herbs for 2-3 minutes, then add ginger-garlic paste, chopped green chilies, finely chopped onion, tomatoes.
• Cover the wok with the lid for 5 minutes.
• Then add spices- turmeric, red chili powder, coriander powder, salt and garam masala. ( Add spices according to the individual’s taste).
• Then again stir and cover the lid for 2-3 minutes.
• Add all the sautéed vegetables in the masala that we have made.
• Add a few drops of water if required. Cover the vegetables for 5-10 minutes so that it gets cooked. But do not overcook them.
• Once the veggies get cooked, add small square pieces of cottage cheese.
• Add cooked rice in the veggies and mix them slowly and gently.
• Add finely chopped coriander and cashews and almonds for the final look.

Your Vegetable Biryani is ready and serve it hot.
